Last weekend was Memorial Day Weekend, the traditional start to American Summer time and barbecue season. In keeping with healthy eating with great-tasting recipes, we explored a twist on the pulled pork… Pulled chicken: Barbecue Pulled Chicken (from EatingWell Magazine- February/March 2006, July/August 2012). This BBQ pulled chicken recipe is a fanciful reinterpretation of pulled pork that slow-cooks chicken in lots of tangy tomato sauce.
